

A popular Michelin Star Dublin restaurant is set to open a second location.
Variety Jones in The Liberties will be expanding its delicious offerings as they look set to open a new venture over the coming weeks.
Chef Keelan Higgs and his brother Aaron opened Variety Jones in 2018, and the restaurant has been awarded a prestigious one Michelin star annually since 2019.
The restaurant, situated at 79 Thomas Street, offers some of the most inspired dishes you'll find in Dublin's fair city.
An interesting list of natural and low-intervention wines accompanies, with an experienced in-house sommelier on hand to recommend the perfect glass to pair with your meal.
The restaurant was originally situated on 78 Thomas Street, but moved next door after a fire in 2023.
Now, with the original spot vacant, Chef Higgs is using it for his next adventure.
Named Mongoose via social media, the restaurant will be smaller than the 32-seat Variety Jones, offering seating for 26 diners.
Speaking to the Business Post, he revealed his aim to open Mongoose over the next couple of weeks - perfect timing for the impending summer evenings.
“We’re hoping now that this is a fresh slate this year [after the fire]. Sunday the 26th of April is what we’re aiming for,” he added.
“We’re looking at doing a simpler offering, a simpler à la carte menu, simpler ingredient flavours, and at a better price point – a little bit more affordable.”
Mongoose will aim to turn around 90 to 110 customers on a ‘typical Sunday’.
Chef Higgs gave more insight into the new venture: “[It’s a] bit more casual, bit more craic. If you're not spending a fortune, you don't mind having a bowl of pasta, a main course, and then legging it after an hour and a half.”
