However we've just discovered another tidbit of info on the show, which is set to air later this spring.
Earlier today, RTÉ2 announced the identity of the maitre d' who will host the show and the couples during their awkward first encounters.

Mateo Saina, is originally from Croatia, and worked in restaurants in Austria and Italy before arriving in Dublin in 2004. He is currently maître d' at Dylan McGrath's restaurant Taste.
Only time shall tell how he'll size up against Fred Sireix, but we're rooting for you Mateo!
