When I die, bury me with a pot of hollandaise.
When we think of brunch, it is unavoidable that a beautiful, shining, heaven-like picture of eggs Benedict appears in our minds.
It's the dish of our dreams.
And the only thing we love more than classic, traditional eggs Benedict is hybrid eggs Benedict.
From crab cakes and slow cooked beef cheek to prawns and pulled pork with heavenly variations of hollandaise sauce – these are the best eggs Benny Dublin has to offer.
A relatively new dish to the Dillinger's menu, this masterpiece is one of the tastiest brunch dishes in Dublin right now.
Picture this: a crispy shell taco bowl topped with slow cooked pulled pork, black beans, guacamole, pico de galle salsa, poached eggs and all topped with creamy, lemon-y hollandaise.
A dream come true, really.
A popular one, but a delicious one nonetheless.
For a mere €10.95 you three massive prawns cooked to perfection, wilted baby spinach, poached eggs topped with citrus-y hollandaise and avocado salsa on English muffins, with homefries on the side.
It'll leave you fed for days.
Often hailed as the best Eggs Benedict in Dublin, herbstreet do theirs a lil differently to others.
Instead of ham hock or thick slices of ham, they serve their ham sliced paper thin – and plenty of it, as seen below.
Their muffins are also thrillingly cheesy.
Although these aren't always on the menu, they are permanently lodged in our top 5 favourite brunches of all time.
The ham hock is shredded to perfection, the poached-ness of the eggs is phenomenal, the sauce is perfectly bitter yet savoury and, of course, all washed down with a cup of gorge coffee. It just doesn't get better than that.
With a divine crab cake, crispy Connemara ham, chilli jam, watercress and creamy hollandaise sauce.
It wasn't dubbed "the best brunch on the Northside" for nothing folks.
This one is all about the slow cooked beef cheek – so tender is falls apart on your plate.
It's served with a crunchy potato cake, garlic cavolo nero, free range poached eggs and dreamy hollandaise.

But there is an undeniable reason why this dish is so loved.
Fish goes perfectly with hollandaise – the lemon, duh.
€14 for golden crab cakes with pink grapefruit, avo and chilli kale. It has to be devoured to be believed.
After undergoing a serious makeover, Brioche have reappeared on the scene with some of the best eggs Benny around.
Instead of just slapping on some ham, Brioche serve their Benedict with slow cooked, free range ham hock and spinach on a brioche muffin topped with poached free range duck eggs and yummy hollandaise sauce. It tastes like more.
